Levantine Hill Optume Shiraz is founder Elias Jreissati and winemaker Paul Bridgeman's shared vision to create the optimum cool climate Shiraz.
The Optume wines look beyond the horizon of the winery's own vineyards. Parcels of fruit are hand selected from individual Yarra Valley sites.
The fruit is hand sorted and destemmed or crushed to small open vats. A judicious amount of stalks are returned to the juice for additional aroma, complexity and tannins. The ferment begins naturally before a specific yeast is added.
The wine spends 3-4 weeks on skins with daily hand plunging to gently extract and integrate the tannins. Once pressed, the wine ages in new and seasoned French oak.
Deep purple, Levantine Hill Optume Shiraz is medium bodied with spicy dark fruit flavours and sweeping tannins. Cellaring potential is 15 years.
